A flavourful journey through the Sierra de Guadarrama
The Sierra de Guadarrama is a land of endless possibilities. Alongside its well-known attractions — nature, heritage and outdoor activities — there is another dimension that is sure to delight the senses: its gastronomy.
The cuisine of the Sierra de Guadarrama is outstanding, rich and wonderfully diverse. Its privileged natural surroundings make it possible to make the most of locally sourced ingredients, which lend dishes a distinctive character and exceptional quality. Among the many native products of the Sierra de Guadarrama are PGI-certified beef, aromatic herbs, spices, wild mushrooms and fungi, honeys of different varieties and flavours, game products, pure goat’s cheese made from freshly milked Guadarrama goat milk, and fresh vegetables irrigated with crystal-clear mountain water.
All of this, prepared by skilled hands, results in magnificent menus served in charming establishments set at the foot of the highest peaks in the Community of Madrid. Wines with the Vinos de Madrid designation of origin and homemade desserts provide the perfect finishing touch — a meal reminiscent of times gone by, with the true, authentic flavour of quality ingredients.
These culinary delights are found very close to the Spanish capital, just over 50 kilometres from Madrid, in municipalities easily accessible by car — much of the journey along motorways — as well as by bus, and even by Renfe Cercanías, which reaches some of them. And once you are in the Sierra de Guadarrama, what better opportunity to make the most of the day than to stroll through mountain villages, immerse yourself in their culture and heritage, and share time with the people who call them home.
